NEW ADVANCES IN NOVAFOODIES PROJECT!
A study of the supply chain of low commercial value fish, bycatches, has been carried out by CTAQUA with the help of the Sanlucar Fish Market.
The CTAQUA team has embarked on one of SanLucar Fish Market fleet boats during the entire working day to evaluate the microbiological (aerobic mesophiles, coliform enterobacteria, Escherichia coli, Listeria monocytogenes and Salmonella spp.) and organoleptic quality (colour, smell, taste, texture…) of each supply point of this raw material (sample collected immediately in the fishing net, during classification, after different hours of the distribution process, upon delivery to the transformation center and after hours of storage) in order to ensure food quality and hygiene of it and with it, the use of this raw material for the food processing industry.
Different samples have been collected at each collection point to identify critical control points.
